Delicious Pumpkin Cake

 

Today’s versus was between Hermione and Dumbledore.  Each the best witch or wizard of their age!   We held 3 votes!  Hermione won the first round in a landslide. Dumbledore took round two where voting was done by comments on lincolnhoppe.com/live.  Hermione won round three, the speed round.  Hermione is victorious again!!!! So in honor of Hermione we made Pumpkin Pastie Cake–a caramelized cake layer on bottom, a pumpkin pie filling and a crumb layer on top.  It’s like a cake but a pie, but a cake.

Here’s how you make it:

Bottom Layer

  • 1 boxed yellow cake mix (minus 1 cup set aside for topping
  • 1 egg
  • 1/2 cup butter, softened

Filling

  • 1 3/4 cup pumpkin
  • 1 cup evaporated milk
  • 2/3 cup sugar
  • 1 tsp. cinnamon
  • 1/2 tsp salt
  • 1/2 tsp ginger

Topping

  • 1 cup boxed yellow cake mix
  • 1 tsp cinnamon
  • 1/2 cup sugar
  • 3 Tbsp butter softened

Remove 1 cup of yellow cake mix.  Set aside for topping. Mix remaining cake mix with 1 egg and 1/2 cup butter. Press into 9×13 inch greased and floured pan.  Mix filling ingredients.  Pour over cake mixture.  Mix topping ingredients until you get a course crumble.  Sprinkle over pumpkin filling.  Bake at 350 degrees for 1 hour.  Cake will be golden brown on top and sides with a gooey pumpkin center.
